昔ながらのひもの。魚は水揚げされた時から熟成、そして劣化が始まる。魚を開いて内臓を取り出し、種類や脂ののり具合、身質などで塩度と漬け時間を変えて干す。塩分濃度は10度（塩120g／リットル）程度。海水の濃度は約3度（3.4％）だから、海水よりも塩辛い。塩水に45分～60分、皮目を上にして漬ける。漬け終わったら、軽く水にくぐらせて表面の塩を流し、水気を拭き取って陰干し。湿度の低い乾燥した日であれば日差しでも可。なお、あい子さんの所は、ブリ専門。のどぐろなどの他の魚は、それぞれ加工が得意な店があるようだ。無理をせず、自分のところでできる数だけ加工。寒風で干しあがったら冷凍庫で保存。昔ながらのやり方だ。ひもの
今回のツアーの中核をなすのは、「ひもの体験」。参加者それぞれが、全身に塩をかぶって風にあたる・・・ではなくて、昔ながらの「ひものを味わう」のが趣旨だ。っていうか、「ひもの体験」とあったので、パンフレットの中身を確かめもせず、朝獲れの魚を開いて干すのを体験するのかなと思っていたが、全然違っていた。ひものはまず、塩を振ることで表面が脱水され味が濃縮する。もちろん、塩分を高くし脱水することで雑菌の繁殖を抑えることができる。そして、風乾し熟成により、魚肉を形成するタンパク質が分解され、「旨味」と呼ばれるアミノ酸（グルタミン酸、アスパラギン酸、イノシン酸など）が生成する。人間の舌においてアミノ酸を主に反応する細胞「旨味受容体」により、旨味が認識されることになる。食品がもともと持っている酵素の力で、たんぱく質の構造を壊して...ひものの味
